Drive after alcohol

When I was ride through a railway to Cambridge stopped me police. An officer said that I was drunk. That wasn't true, because one hour before a trip I ate 5 gorgeous apples. I know that apples could ferment in my stomach. That could do that alcohol in my blood would be higher. I asked a doctors and one told me, that is possible. But on a road no one belived me and I paid high mandate and still couldn,t drive a car bcaude my driving license is in a hand of police. Could you help me?
